Taco Stuffed Sweet Potatoes: Ditch the Tortilla—Stuff It in a Sweet Potato and Call It a Better Idea

Today is World Health Day! So here is a healthy twist on everyone’s favorite.
Full disclosure: This idea comes from the great Jet Tila. He posted a video with this meal. It sounded and looked so good that we made it for dinner that week. We love sweet potatoes. And we love tacos with all the variety of fixin’s. So how could this go bad? It didn’t. It was even better than anticipated.
A sweet potato stuffed with taco meat is the kind of dish that quietly rewires your expectations. It starts humble—just a roasted sweet potato, blistered and caramelized at the edges, its natural sugars deepening into something almost smoky. Slice it open and the steam carries that earthy sweetness, soft and comforting, like a built-in invitation.

Then comes the contrast. Taco meat—rich, savory, spiced just enough to wake everything up—gets tucked into that fluffy orange center. The cumin, chili powder, garlic, maybe a hit of paprika, all settle into the sweet potato like they’ve been waiting there all along. It’s not just balance; it’s a conversation. Sweet meets heat, soft meets hearty.
From there, it becomes a canvas. A spoonful of cool sour cream or Greek yogurt melts into the warmth. Fresh cilantro cuts through with brightness. Maybe some diced or pickled red onion for bite, avocado for creaminess, a squeeze of lime that sharpens every flavor into focus. Even a little shredded cheese, melting into the crevices, feels right at home.

Baked Sweet Potato
Bake as many potatoes as needed in the method you prefer until potato squeezes easily
Taco Meat
Ingredients
1 pound ground meat (beef, turkey, pork, chorizo)
4 TBSP Homemade Taco Seasoning (Recipe below)
8oz tomato sauce
salt and pepper to taste
Directions
In a large skillet brown ground over medium heat.
Drain any grease.
Stir in Homemade Taco Seasoning
Stir in tomato sauce.
Simmer over low heat for 3 minutes.
Serve with desired toppings.
Assembly
Cut potato down the middle but not completely in half.
Squeeze potatoes from each side to expose interior.
Mash with a fork to pull potato from skin.
Top with ingredients same as you would fill a taco
Taco Seasoning
Ingredients
1 tablespoon chili powder
1 ½ teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon ground black pepper
½ teaspoon ground paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon crushed red pepper flakes
¼ teaspoon dried oregano
Directions
Put all ingredients in a bowl and mix until evenly incorporated.
Store in airtight container
