Pickled Shallots - A Quick, Delicious, Addition to your Summer Meal! - Our Recipe of the Day - June 8, 2025

In summer we are always looking to spruce up meals with a light, refreshing, addition. Pickled Shallots fit that role perfectly. They are easy to make and give a delicious boost to salads, sandwiches, burgers, brats, well, basically to anything.


An added bonus is how quick and simple they are to make. Recipes are versatile. You can add or adjust however you prefer. Plus, they last weeks in the fridge. Although you will find they get devoured long before that.

Ingredients

  • 1/2 cup sliced shallots (about 2 shallots)

  • 1/3 cup white vinegar (can use cider vinegar, too)

  • 1/4 cup water

  • 1/8 teaspoon salt

  • 2 teaspoons sugar or honey

  • 1 teaspoon colored or black peppercorns

  • 2–3 bay leaves (fresh are pretty)


Directions

  • Place sliced shallots in small jar.

  • Put vinegar, water, salt and sugar in a small sauce pot.

  • Bring to a simmer, stirring until sugar is dissolved.

  • Stir in peppercorns and bay leaves.

  • Pour vinegar and water mixture over shallots in the jar.

  • Let cool.

  • Put lid on jar and chill in the fridge.

  • Enjoy at your leisure.
